About Us

Big house, big service, small staff…Stimson-Green Mansion Catering Company employs only a couple dozen people to bring you the amazing food and very personal service that make events at the Mansion memorable.
 

Executive Chef David 'Dig' Wandrie hails from Mackinac Island, Michigan, and grew up in a culinary family.  One of his earliest memories of food, is the aroma of freshly-made tortillas in his father's restaurant .  Oftentimes, he would cook with his maternal grandmother, she would cook while he played the "pots and pans" with his wooden spoon.  David is a self taught Chef, with a foundation in classical French cooking and the influence of a Sicilian mentor.  His menus reflect the deep culinary traditions of the many foreign countries he has visited.  The Japanese Butterfish dish, the Portuguese Fisherman’s Ragoût, the Mexican Mole Pork Loin (all of these dishes are featured in our Fall Winter '07 / '08 menus)  are only a few of the offerings that reflect his time away.  Chef Dig describes his style of cooking as thorough.  He believes that in order to create exquisite food, a chef must never be willing to cut corners. 

It is the sum of his travels, his belief in presenting a unique product, his desire to maintain consistent food quality and his painstaking attention to detail, that makes Chef 'Dig' a perfect fit to head the Stimson-Green kitchen.

 

 

Sales, event planning, and client service are handled seamlessly by Mindy Milton and Gillian Faulkner Baumann.
 

 

Mindy Milton, Catering Sales Director, brings more than 25 years of extensive food, beverage, and event planning experience to The Stimson-Green Mansion. Though she has literally assisted thousands of couples with their wedding plans, she still considers every event unique, giving her undivided attention to each person. Truly a city dweller, Mindy lives minutes from downtown Seattle. Eating out, cooking, exploring city haunts, and attending the theatre are her passions. Her daughter Savanna, shares her love of the theatre, and at age 14 she is already destined for fame and bright lights. Married for 17 years to a wonderfully funny and crazy guy, life is never dull. Lucky for Mindy, both her husband and daughter love a good party and have reaped the benefits of her event-planning career. For Mindy, there is nothing better than a house full of family and friends, great food, and a good time.

 


Our wait staff, some of whom have been with the company for 20 years, are teachers, salespeople, and massage therapists by day, but when they don their black and whites, they’re all about making sure you and your guests have the best event ever.

 


Gillian Faulkner Baumann, General Manager and Catering Sales Manager, hails originally from County Antrim, in the northeast of Ireland, and still lilts when she talks. Her professional training took her from huge restaurants in London to four and five star hotels in Germany and Switzerland.  After working in Baden Baden, Germany,  Gillian  immigrated to the States, working initially at hotels and restaurants in Florida, but it was Seattle – rain and all – that won her over.  Gillian worked locally for the Kimpton Group at Sazerac, the Painted Table, and then the Library Bistro. From her years as Director of Private Dining at Tulio, she realized catering was where her heart lay. Hence Stimson-Green. Like her mum said, “If you’re going to do something, do it well or don’t do it at all.” Thanks mum, thanks Gillian!

Our philosophy at Stimson-Green Mansion is simple. We believe every event is about great food, prepared lovingly, presented beautifully, planned and served seamlessly, in Seattle’s finest historic home. And our clients are encouraged to be as involved as they want to be—some of our hosts like to consider every detail, while others show up for the first time the night of the party. Our food is fresh, local, and seasonal. We celebrate the year ‘round bounty of the Pacific Northwest and the craft of its artisans, from bakers to cheese makers. Executive Chef Dig harvests herbs and flowers from our own kitchen garden, cans our own relishes and preserves, smokes our own meats and fish, even makes our own truffles. Come sample the delights of the Mansion.
