Pairing wine with chocolate, can be a match made in
heaven, but only if you have the right wine to complement the
right chocolate. That is why we have brought in the experts ~ Theo
chocolate and David Le Claire, local sommelier.
Host a private party, invite your friends and enjoy
this experience, when two of life’s greatest pleasures share the stage, in
this enlightening and entertaining tasting exploration.
Every course is made with chocolate and paired with
wine. Experience exquisite sensations, as these two elements combine.

the Ghana, Panama, Ecuador blend of organic cacao (75% cacao content)

cousins are the Broccoli and Cauliflower)

Fair Trade Certified cacao from the fertile growing region

Kumasi, Ghana. (84% cacao content)

Chocolate used in this wine dinner comes exclusively from Theo
Chocolate.
The chocolate makers at Theo carefully steward their cacao (cocoa beans)
through the process of roasting, blending and conching in order to coax
out the distinctive flavor imparted by each unique growing region.
They are the first roaster of Fair Trade Certified™ cocoa beans and the
only roaster of organic cocoa beans in the United States. Theo is
located in the Fremont area of Seattle.

The wine pairing is orchestrated by local sommelier David Le Claire
David Le Claire
is a certified sommelier from the Court of Master Sommeliers. He is also
a free-lance writer for Northwest Stir & Hospitality News Magazines. In
his spare time, he can be found at North Seattle Community College,
where he is an instructor.
